‘I inherited a great terroir and tradition from my ancestors, but I felt I couldn’t progress or make better wines if I wasn’t prepared to get my hands dirty.’ Sophie Cossy, winemaker and owner of Champagne Cossy, grew up as a child. From an early age, I learned how to make champagne from my grandfather and father and studied to acquire the skills. However, in order to fully understand the knowledge she had and to make better wine, she had to understand the vineyard, which is the most important but also the most basic, and she boldly went out to the vineyard to gain her experience.




History

This is a family-run champagne house of the Cossy family that started in 1764 and is a Premier Cru champagne producer located in Jouy-Les-Reims, the heart of the Montagne de Reims region of Champagne. She sold juice to a large champagne house in her neighborhood for a long time, and in the 1950s, Sophie's grandfather began producing champagne in earnest. Since the 1970s, Sophie's father, Francis Cossy, took over and has been making wine with his wife, Genevieve. Since 2006, with Sophie's full-scale joining, a new change has been attempted. After Francis passed away suddenly, the mother and daughter have been running the business since 2009, managing all aspects from winemaking to sales.



Terroir, and winemaking

The vineyard located in the middle of the hill boasts top-quality soil. The biggest advantage is that drainage and absorption are excellent, so even during the summer when droughts are severe, sufficient water can be supplied, allowing healthy grape clusters to be obtained, and sufficient ripening is maintained due to sufficient exposure to the sun and good sunlight. Pinot Meunier, which gives roundness and rich fruity flavor, and Pinot Noir, which can add body and power, are grown on 3ha each, and Chardonnay, which gives delicacy and vitality, is grown on about 1ha, blending most wines for perfect balance.


Champagne Cossy, which is made using an environmentally friendly method, has been using horses to manage weeds without herbicides and pesticides for over 15 years. Both the wine box and glass are made from recycled materials, and the labels also use light-mass paper to reduce resource waste. In addition, the biggest advantage of this champagne house is that it is actively practicing respecting nature and making healthy wine by reducing water waste due to the natural soil that absorbs water well.


As every step of winemaking always involves important decisions, the wine is made with care after determining and applying the appropriate method at every step, from the juicing process to the degorgement. Blending, an important step in determining taste, focuses on a delicate balance of technology and experience and strives to create Cossy's unique and excellent style.
